Canning Salsa Part 2

On Tuesday, my friend Carley and her children came over. It was a lot of fun. Our kids have a great time together, and so do we. I had some tomatoes that I picked from my mom's house the night before. My mom planted a full garden box of tomatoes, and I picked 1/2 bushel. They were the prettiest tomatoes I have ever seen, I didn't take a pictures of them, but the looked perfect. They were called "DX-52". Next year, I'll remember to plant that variety in our garden. She also had a few of the "early girl" variety, that were a little bigger, but the majority of them were the DX-52 kind.

I had all of the things to make salsa, so that turned out to be our afternoon project. The kids were great and played outside all day. This time of the year has got to be one of my favorite seasons. The kids can play outside all day long without getting too hot, and it's harvest season. It's darn near perfect!

Thanks Carley for all of your help. I have your salsa for you when I see you again, which hopefully will not be another month again like last time!

S-girl and her son are 8 months apart in age. They both started school this year.

Our girls are only 4 month apart in age, so they have a lot of fun together dressing up like princesses.
This is Carley. She had two matches in her mouth because it helped her cut the onions without crying. I tried using one match in my mouth, but the onions still got to me, that was when she took over. Maybe next time, I'll try two.

This is the salsa simmering. It makes the house smell so good.



Here is the final picture of the salsa on the right. We ended up with 9 pints total. I also had enough tomatoes to do 7 quarts of plain tomatoes, plus, I bottled 4 pints of beans yesterday from our garden. Thanks to Mike for setting it all up so nicely last night for the photo shoot. It looks great.

Truly, I don't know how you do it! You say your kids sound just like mine, but my baby wouldn't let me get away with that. I'll have to get a copy of all your recipes for when I actually dare try it again.

It was SO much fun! Now I know I can because I did it (with a LOT of your help!) Since I forgot my camera, I stole some of the pics from your blog....hope you don't mind!!!
