Friday Night Pizza

When I grew up, we would always have pizza on Friday night. I love this tradition. Occasionally, I also love to make homemade pizza. For the longest time, I could not find a good whole wheat crust recipe that I liked. I tried several, but the kids would not eat it because it was too soggy or they didn't like the taste. Thanks to the wonderful website www.dlife.com, I found this whole wheat crust recipe. My kids love it now!

Crust: 2 1/2 cups all purpose flour
1/2 cup whole wheat flour
2 packages (1/4 ounce each) quick rise yeast
1 teaspoon garlic powder
1/2 teaspoon salt
1 cup warm water
2 tablespoons olive oil

Whisk together all purpose flour, whole wheat flour, yeast, garlic powder, and salt in a large bowl. Stir in water and oil and combine well, do not over mix.
Move dough to a floured surface and knead for 5 minutes until smooth and flexible.
Move dough to a greased bowl and flip over to grease top. Wrap with plastic wrap and let rise for 30 minutes in a warm place. Dough should be doubled.
Punch down dough and split in two pieces. Roll out each piece into a 12 inch sphere. Move each to a greased 12 inch round pizza pan. Make holes in dough with a fork. Move to an oven heated to 400 degrees F and cook for 8 to 10 minutes. Crust should be slightly browned.
To finish, spoon 1 cup sauce over each pizza crust along with toppinga and cheese. Move back to oven and bake for 12 to 15 minutes or until cheese is bubbling and melted. Serve warm and cut into 6 slices per pizza.

I remember Friday night pizza night with your family in college! I love it and we do it sometimes in my family too-though not every Friday. Way to go with the traditions!
